A few ladies have asked about the General Tso Chicken that was mentioned in my Weekly Menu . We had it tonight and found it to be very yummy. We are planning to have this on a regular basis, along with Low Mein, rice, and steamed vegies.
Notes: I used 2 large California Chili Pods, cut into small pieces. I also doubled the sauce recipe. 🙂 We are thinking of grinding the chili pods and adding them to the sauce, the next time we make it.
General Tso Chicken
- 2 pounds of boneless, skinless, chicken thighs, cut into cubes.
- 3 eggs, beaten
- 1/2 cup cornstarch
- 2 tsp cornstarch
- 5 dried chicli pods –
- 1 1/2 TB rice vinegar
- 2 TB rice wine
- 3 TB sugar
- 3 TB soy sauce
Mix the eggs and cornstarch and coat the chicken. Fry chicken in oil (I used Olive Oil) and place on a paper towel to drain.
Mix together the 2 TB of cornstarch, rice vinegar, rice wine, sugar and soy sauce.
Cook chili pods in the pan, add fried chicken pieces to reheat, add sauce, toss and cook until it is thick and bubbly.
Serve over brown rice.
