In my kitchen today, bread crumbs and croutons

Yesterday I baked four loaves of bread and one Garlic Ring Loaf.  It was after I had kneaded the dough that I realized, I had only put in 1 TB of yeast instead of 3 TB.  So, what do you do with dense bread?  Let the girlies eat the garlic bread, because they don’t know any better or make croutons.

Croutons

Slice a loaf of bread and slab on some butter and garlic.  Cut slices into squares the size of croutons you want.  Place bread squares on trays and set dehydrator to 145 degrees for around 4 to 5 hours, until very dry.  Store croutons in a sealed container.

 

Homemade Italian Bread Crumbs

Slice bread.  Place slices in dehydrator for a few hours until thoroughly dry.  Break up slices and place in food processor and process until fine crumbs.  Add the following:

For every two cups of crumbs:

  • 1 tsp salt
  • 2 to 3 TB Italian Seasoning
  • 1 to 2 tsp garlic powder

Mix and place in a sealed container, put in frig.  If you have a food sealer, you can seal them in mason jars and they’ll keep a long time.

Tonight I will be going to a neighbor’s house for our annual Cookie Exchange.  I would rather just bring finger foods and not have a cookie exchange, but I don’t make the decisions around here. 🙂   I have two boxes of Duncan Hines Spice Cake Mix that I have to get rid of, so I search the world over and found this recipe.  I have all the ingredients, so this is what I am taking…good or bad.  lol

Old Fasion Oatmeal Cookies from Recipe Gold Mine

  • 1 (18.25 ounce) box Duncan Hines Spice Deluxe cake mix
    2 cups uncooked rolled oats
    2 eggs
    3/4 cup vegetable oil
    1/4 cup milk
    2 cups raisins
    1 cup chopped nuts
    1/4 cup firmly packed dark brown sugar

Heat oven to 350 degrees F.Combine all ingredients and mix well. Drop from a teaspoons onto an ungreased cookie sheet. Bake for 10 to 12 minutes, until cookies test done with a wooden pick.

Cool on cookie sheet for about 1 minute, then remove to rack to finish cooling.

Makes 4 dozen cookies.

  5. I’m with ya Michelle. In my early adult years I worked hard to excel at cooking and baking the very things that would make me fat in the later years. Irony!

    I have homemade cookie dough in my fridge. I refuse to bake more than one serving at a time. I don’t care what it does to my electric bill. An extra few dollars is way better than having 3 dozen cookies sitting around to test my will power. So far I’ve baked 14 cookies from the dough. I think I will bake the rest and give it away to those who can still eat such tasty garbage, like those semi young nephews of mine. @.@

  8. I seriously believe our oldest daughter could exist solely on croutons. I’ll give her this recipe.
