Sometimes I use freshly ground soft wheat flour for my muffins. :p
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup apple juice
- 1/4 cup water
- 1/4 cup butter, melted
- 1 TB vinegar
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
In a large mixing bowl, combine the dry ingredients. Stir until well mixed. In a separate bowl, mix the wet ingredients. Mix well. Add the wet indgredients to the dry, and add the chocolate chips. Mix until blended, but be careful not to overmix.
Pour into greased or paper-lined muffin tins. Bake at 375 for 18 minutes.
